Watermelon Salad with Mint & Lime Yoghurt

Here’s a lovely summer salad with a fresh mint & lime dressing, perfect for warm days. It would also work really well to bring on a picnic. My friend @theroguebrusselsprout asked me to contribute to her collection of salad dressings, and after messing my first attempt up, this is my second try. I dare say this turned out better.

MINT & LIME YOGHURT
1 dl natural vegan yoghurt, Greek or Turkish style
1/2 lime, zest and juice
1 tbsp olive oil
0,5 tsp agave syrup
handful of fresh mint, chopped
salt & pepper

Salad details: cooked whole bulghur, watermelon, avocado, green lentils, basil, mint and cocktail capers. Season with salt, pepper and olive oil and serve with the mint dressing.
