Have you decorated your Christmas tree yet? We have, and as much fun as that was, there’s always room for more! Yeah, I know – it’s not exactly a Christmas tree. But when I saw the picture, it just reminded me of a decorated fir tree, and the crown like a star on top!

I simply cut the pineapple in half and carved the flesh out and diced it. I put the pineapple dice back in, and decorated it with clementine slices, blackberries, pomegranate arils and mint leaves.
