French Toast

Can you believe that I’ve never made French toast before? My kids were beyond excited to hear about “pancake toasts” and munched down a whole bunch of these. Luckily, I made quite a few so there were enough for me too.

I thought it would be timely to post these on Le Quatorze Juillet, the French National Day! But here in Sweden, we use the name “Poor Knights” for these treats, and they’re traditionally served with caster sugar and cinnamon.

Ingredients:
8 slices of toast bread
3 dl plain flour
2 dl plant milk
1 tsp baking powder
1 tsp vinegar or lemon juice
0,25 tsp vanilla powder
a pinch of salt
For serving: caster sugar and cinnamon

Whisk together a smooth batter of flour, plant milk, baking powder, vinegar, vanilla powder and salt. Soak the bread in the batter and fry on medium heat in vegan butter until golden on both sides. Dip in caster sugar and cinnamon while still hot and serve immediately.
