Carrot cake is a long time favourite, so I thought it would be fun to try baking with another vegetable, namely beetroot. I loved how the colour turned out, and I thought that the earthy tones from the beetroot were nice. I used a chocolate frosting, but when I bake it again I’ll try a lime cream cheese frosting instead. I think that will contrast better with the sweet cake. Always fun to experiment in the kitchen!
